There’s really no need to add a finish to the exposed sides of the dovetails. Applying a finish won’t significantly improve durability unless you’re aiming for a smoother feel for aesthetic purposes. If that’s the case, simply wipe on a clear satin polyurethane—such as a Minwax product—and that should do the trick. However, most people prefer to leave them as raw wood.
