Open cabinet as a corner cabinet

I am designing a corner vanity, 21” deep. Wondering if it would work to use a 21” x 27” no door cabinet in the corner. We would modify it by adding vertical panels 6” in on the longer side to make small cubbies, leaving a 21×21 open box in the corner which could be accessed through the side of an adjacent cabinet?

Yeah, that is fine, you are essentially making a exposed blind corner cabinet that can be used for exposed storage. The only warning would be to ensure you are ordering an exposed interior cabinet to ensure the interior matches the cabinet exteriors.
