        Our 1980s cabinets with double doors have a built-in 2-inch wide center stile. Current cabinet doors leave the stile exposed. The doors have a lip (rabbet?) so part of the door fits inside the frame. I will be ordering shaker doors.

        Is it OK to leave the center stile and measure for full overlay? Current doors are hung with with hinges on the same side (e.g. right side) so they both swing open left to right. I plan to to put hinges on opposite sides so doors meet and close in the middle against the stile.

          Yes, you can overlap the center stile as much as needed to cover that area. The only critical section is the hinge side, since the hinge and overlay must align correctly (e.g., a ½” hinge-side overlay requires a ½” overlay hinge on that side).
